We don't rush. A proper croissant takes three days — the dough needs time to develop flavor, the butter needs to stay cold, and the lamination can't be skipped. We'd rather close early than serve something we're not proud of.
That's the Bitterroot way. We believe food tastes better when it's made with care, when the ingredients matter, and when the person baking it actually eats at their own counter at the end of the night.

Nothing arrives pre-made. Every dough is mixed, every glaze is whisked, every batch starts with raw ingredients and patience.

We partner with Montana farms and dairies whenever possible. The better the ingredient, the less we need to do — the flavor speaks for itself.
